Choc Coconut Raspberry smoothie

This delicious creamy smoothie was the perfect boost yesterday when I felt like something sweet but also full of goodness with spinach and Avocado that you cant really taste.

Ingredients:
1/2 frozen banana
1/2 cup berries raspberries
1/2 cup spinach
1/2 Avocado
2 scooped tsp cacao powder
1/2 cup coconut cream
1/2 cup almond milk or coconut water
Blend ingredients up and serve topped with goji berries, coconut, and cacao nibs.

Kumera and Butternut Pumpkin Fritters

These were perfect to come home to after a big day training and coaching clients. I just whipped them up in 15 minutes and had with the best piece of Venison Steak with them mmm :).

Ingredients
1/2 cup Grated pumpkin (Peeled and Raw)
1/2 cup Grated Kumera (Peeled and Raw)
1 Potato (Peeled and Raw)
1-2 Eggs depending on how runny your mixture is.
1/4 Cup flour (I used Gluten Free but any would work)
1-2 Spring onion chopped finely
Salt and Pepper
1T Sweet Chilli Sauce (Optional)
Oil

Method
Grate Pumpkin, Potato and Kumera I used the food processor with the Grater attachment but by hand would be fine also. Finely chop spring onion and add to the mixture. Add flour and Egg and season with Salt and Pepper.prep

 

I added a wee dash of sweet Chilli Sauce but you don’t have to. Mix everything together and spoon into frying pan with a bit of olive oil and press down firmly. Mixture kind of sticks together better once it gets cooking.
Flip over so they’re nicely browned both sides and your away 🙂
